BOTANICAL NAME: AGAVE POTATRUM

AGAVE TOBALA

The Tobala agave matures slowly, taking up to 15 years to reach full maturity. Its flower spike can measure between 3 and 6 meters in height when fully developed and displays pale green and yellow flowers. This prolonged growth period contributes to its complex and rich flavor, making it a coveted ingredient in premium mezcals.


This variety is becoming increasingly rare in some regions due to its small size and long growth period of 12-13 years.

CHARACTERISTICS

  • Cultivated agave
  • Harvested at 12 years of maturity
  • Cooked in a conical oven with mesquite wood.
  • Hand-crushed with a wooden mallet
  • Fermented in pine wood vats.
  • Double distilled in a copper still.

TASTE NOTES

Aroma

A soft, elegant smoke dominates the nose without being overwhelming, followed by notes of freshly cooked agave, vibrant citrus, and warm dried fruit.


Taste

A medium-bodied mezcal with a smooth, creamy mouthfeel. Its subtle smokiness is balanced by the sweetness of the agave, vibrant citrus, and the complexity of dried fruit and nuts.


Finish

Clean and clear thanks to careful distillation, with a lingering smoothness that makes it ideal for sipping neat or in cocktails, especially margaritas, palomas, and mojitos.
